Adabi Seafood and Salted Fish Curry Recipe:
Ingredients
600gm Prawns, Crabs or Salted Fish
100ml/gm Cooking oils
26gm Seafood and salted fish Curry Powder Adabi
64gm/3 nos. Shallots (crushed or blend)
2 nos. Garlics (crushed or blend)
1 no. Onion > (slices)
1 cup (220ml/gm) Coconut milk
2.5gm(1/4 teaspoon) Adabi Tamarind Paste
Or 1 teaspoon Seeded Tamarind
700ml(3 1/2 cups) Water
1 1/2 nos. Tomatoes
2cm Cinnamon Stick
1 stripe Curry Leaf
Salt and Seasoning to taste
Cooking Instructions:
- Heat the cooking oil in a braising pan or cooking pot.
- Saute the cinnamon stick, sliced garlic, onion and curry leaf until fragrant and turns into golden color.
- Then, put in the curry paste and saute it gently until it become slightly brown. (Cautions: Slightly saute the paste gently
- approximately around 5 minutes).
- Pour in the remain amount of water, 1 cup of diluted tamarind and seafood. Boil around 10-15 minutes.
- After that, add the coconut milk, tomatoes, salt and seasoning to taste. Reduce to a lightly thickened consistency for another 10 minutes, ready to serve.
